Facing the ocean and a vast beach of fine sand, the restaurant at the Les Brisants hotel is going from strength to strength. Recently revamped, the sea-facing dining room has been made even more elegant, while chef Jean Marc Perochon's cuisine has become even more refined and inspired. What you can expect here is an exceptional meal with an iodised, Vendée-style flavour (duck) that will allow you to discover a cuisine that really stirs the emotions.
There's a wonderful range of dishes based around sardines from St Gilles Croix de Vie, taken to levels rarely attained, and superb fish from the local fishery, subtly magnified by precise juices or broths.
