After taking over the family farm in 1994, Marie and Thierry Chable began producing bread and flour in 2004, all certified organic. They work exclusively with ancient varieties and make pure sourdough bread three times a week, to which they sometimes add seeds and fruit, and supply various organic shops in Le Mans and Alençon.
