The Jardin de Vaulieu, the town's floral gem, used to be a sandstone limestone quarry. It was exploited from ancient times until the 1950s. The Town Hall acquired it in 2003 and restored it.

It provides an insight into the geological evolution of Sallertaine through the ages. Sallertaine was built on a limestone island. It was once surrounded by salt marshes.
