L'Atelier du Sel
Gilles Morel (uncle) and Matthieu Le Chantoux (nephew) are independent salt workers and producer-harvesters based in the Guérande salt marshes, particularly in the Mès basin. In the commune of Assérac, they operate the "La Freinaye" and "Guignolet" salt pans at a place called Pen-Buzo.
The delicate fruit of the ocean, the sun, the wind and the ancestral know-how of the salt workers, their Guérande Salt and Fleur de Sel are harvested using traditional methods, are neither washed nor treated and drain naturally from the salt pans. They pay particular attention to the quality of their products, and their work is carried out without any mechanisation in order to respect the structure and taste of a natural salt.
Fleur de Sel and Sel Gris Marin from L'Atelier du Sel have the PGI (Protected Geographical Indication) label, which guarantees the origin, production method and harvesting method.
