La Fleur de Sel
1/ Take the small bridge and walk alongside the salt producers' huts. Before turning right on the footbridge, you can spot the salt pans and take advantage of the salt workers' welcome in season.
FLOWER OF SALT
Fleur de sel is the 1st layer of white crystals formed on the surface of the salt marshes by the wind.
Its fine, iodised taste makes it an ideal ingredient in cooking.
2/ Continue along the path through the marshes. Take the time to look at the Gueffard mill on the right.
MOULIN GUEFFARD
This building has fallen into disrepair in recent years.
This mill may have once been a watchtower.
3/ At the end of the path, turn left again and go straight ahead on a narrow track, then take a track on the left as far as the impasse des Gabelous, at the entrance to the village of La Burelière.
4/ Turn left into rue de la Burelière and, after the bend, take the footpath on the left into the marshes. Continue until you reach a crossroads, where you take the path on the right towards the salt marshes.
5/ Take the time to discover the statue of the salt carrier and continue straight ahead until you reach your car park.
THE SALT CARRIER
This oak statue from the Olonne forest, representing a salt carrier, was carved during the Fête des vieux métiers in 2008 and inaugurated in July 2009, before being restored a few years later.
It is the work of Jacques Pissenem, a chainsaw sculptor.
